“Ingredient centred food”. In the kitchen, traditional Japanese techniques are adhered to, the chef gives his full attention to his ingredients, and occasionally gives full flight to his imagination to allow himself to incorporate any number of genres and essences into his food. The freshest organic vegetables, with earth still clinging to them, are sent in from contracted farmers, seafood comes in from local fishing ports, and meat from healthily reared cattle, pigs and chickens is delivered from selected farms. The kitchen staff visit the farms and the producers so that they are able to incorporate the spirit as well as the innate flavours of the ingredients selected From the full menu to casual dishes, all are made with carefully chosen ingredients, and all dishes are adjusted daily depending on the seasonal produce delivered that day. Enjoyable seasonal fare which reflects the four seasons of Japan – perfect for corporate entertainment, celebrations and family dinner parties.
