Cheltenham Beer Week 2019. This year's Collaboration Beer is Star Session IPA. It is an unfined 4.4% organic IPA, brewed at Stroud Brewery in collaboration with many of Gloucestershire's finest breweries (Stroud Brewery/Battledown/Brewhouse and Kitchen (Cheltenham) /Corinium Ales/Cotswold Brewing/DEYA/Gloucester Brewery/Goffs Brewery). The beer has a crisp flavour that is perfectly balanced with aromatic hops (El Dorado, Simcoe and Idaho 7) and dry hopped to give a rounded and very moreish session IPA (suitable for Vegans). Trappist beers tend to be named after the place in which the monastery is situated. We've called ours 'Tynt Meadow', to honour the link with the plot of land on which monastic life was refounded here in the Midlands almost two centuries ago. Being part of the great Trappist tradition, we've chosen to produce a strong dark ale, but one with a clearly English character. Tynt Meadow is mahogany-coloured, with a subtle, warm red hue, and a lasting beige head. Its aroma carries hints of dark chocolate, liquorice, and rich fruit flavours. This is a light, bright and very satisfying beer. Lightly golden with a bubbly, medium white head that steadily shrinks to a thin foamy lace, the aroma is soft and sweet with grain and very flowery hops. Our Kellerbier is based on the oldest known recipe at ABK. Dating back to 1308. Kellerbier translates to "cellar beer," an obvious reference to the cooler temperatures the beer is brewed and conditioned under. Lacking any type of refrigeration technology, brewer's would brew their beer during the cool months of the year and then lager them in caves. First sold in 75 cl (25.4 FL. oz.) bottles, it is noted for its copper color and as the first beer brewed by the monks of chimay in 1862. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavor qualities of this beer very harmoniously. Deep blonde in colour, Barbãr's creamy head gives off a powerful aroma, unobtrusively scented with honey and accompanied by a bouquet of floral, spicy and citrus notes. Saison Cazeau is a light white beer, refermented in the bottle, with 5% alcohol content. "A true seasonal beer, as refreshing as it should be! Taste it in the summer, sitting at a terrace table … Originally, season beer was a beer brewed before the summer and intended for summer-season farmhands. It had low alcohol content and a marked bitterness that made it really refreshing. We wanted to offer a truly seasonal Season with production limited in time. As Laurent Agache's parents had created a cottage-type aperitif based on fresh elder tree flowers, greatly appreciated for family festivities, we have tried to use that flower for producing our Season. The elder flower, combined with the Sterling hop, was wonderful right from the first tests: the bitterness of the hops underlined by the flower brought a new and really nice freshness. Saison Dupont is a world classic beer and the yardstick for one of Belgium's most important beer styles. It is the most admired AND imitated Saison in the world. A strong, vital yeast is key to full attenuation and thus to the style. Saison Dupont is straw colored with a dense creamy head. The appearance of this exceptional beer is matched only by its taste! To make our Framboise, we add raspberry juice to our lambic. That gives it a delicate fruity aroma and a beautiful dark pink colour, just like the dress I wore to our cousin Willy's wedding. Making apple beer goes back to ancestral tradition. The Celts drank it in abundance during their harvest festivals. All we have done is extend the pleasure to the present day by adding the juice of several varieties of apples to our delicious lambic. There are several stories to explain the origin of the term 'gueuze' . This name dates back to the Rue de Gueuze in Brussels where, for the first time, a producer offered his delicious lambic in champagne bottles. Word about the 'lambick on Rue de Gueuze' quickly got around. According to other sources, gueuze has its roots in 'gazeux' - the French word for carbonated - since traditional gueuze is a carbonated blend of different lambics. After the Second World War, some lambic brewers devised a new production method. They filtered the beer, added sugar, saturated it (with carbon dioxide) and pasteurised it. This new gueuze, closed with a bottle cap and available in 25 cl bottles, was called capped gueuze. Developed according to this production method, Gueuze Lindemans is a slightly sweeter version of Old Gueuze Cuvée René. Serving Sizes: 375ml Bottle
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It's a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25, 000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the "best before" date! Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You'll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures. Serving Sizes: 375ml Bottle
We've already told you that our family never does anything the way other people do. Kriek Lindemans is a good example of that. In order to obtain a beer like no other, we have been adding whole sour cherries to our lambic for generations. Our meeting with American importer Charles Finkel in the 1970s revolutionised the fruit beer segment. Charles convinced us to export our old kriek to the United States by boat. What we had not thought of is that the movement of the waves would reactivate the fermentation process and cause the corks to pop during the trip. It was like something out of The Adventures of Tintin. To prevent that from happening, we therefore developed an alternative production method for our kriek. We use fresh, not from concentrate, unsweetened cherry filtrate which we blend with lambic that is at least one year old before fermenting & macerating for up to 3 days and pasteurising the whole batch. So the corks don't pop. Due to the use of filtrate and pasteurisation, this kriek is sweeter and fruitier than Old Kriek Cuvée René, which undergoes a second fermentation process in the bottle. Thanks to its innovative flavour, it was a resounding success both here in Belgium as well as around the world. Nowadays, it is undoubtedly the reference kriek for consumers. For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it. The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings. Serving Sizes: 37,5cl

This is an aged Belgian red ale, which is 'ripened quietly in oak barrels for two years', according to the label. It has an extremely pungent aroma of rich grapey fruit, with acidic notes, very much like a slightly sour red wine or possibly a gueuze. Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. NOTE: The ABV-value of this beer varies, in the United States 6.9% is used. The Orval's brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What's special about Orval's beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. Wipers Times 14 is a blond beer of high fermentation, brewed with 4 grains, 4 herbs and only local hops. The name of the beer is a reference to the 'trench gazette' which was printed in the 'Kazematten' by British Soldiers during the First World War. It was printed on a printing press they salvaged from the ruins of the destroyed city of Ypres. Wipers is the nickname soldiers gave to the city of Ypres, deliberately mispronounced as Wipers. One of the herbs that is used to flavor the beer is the seed of the medicinal Saint Mary's Thistle, also called 'blessed thistle'. Duvel is a natural beer with a subtle bitterness, a refined flavour and a distinctive hop character. The unique brewing process, which takes about 90 days, guarantees a pure character, delicate effervescence and a pleasant sweet taste of alcohol. Apart from pure spring water, which is the main ingredient of beer, barley is the most important raw material. Barley must germinate for five days in the malt house, after which malt remains. The colour of the malt and as a consequence also of the beer is determined by the temperature. Duvel obtains its typical bitterness by adding various varieties of aromatic Slovenian and Czech hops. We use only exclusive hops that are renowned for their constant, outstanding quality. Duvel ferments for the first time in tanks at 20 to 26°C. The brewer uses his own culture for this. The original yeast strain, which Victor Moortgat himself selected in the 1920's, originates from Scotland. After maturing in storage tanks in which the beer is cooled down to -2°C, the drink is ready for bottling. Thanks to the addition of extra sugars and yeast, the beer ferments again in the bottle. This occurs in warm cellars (24°C) and takes two weeks. Then the beer is moved to cold cellars, where it continues to mature and stabilise for a further six weeks. Was first brewed in 1934 and the recipe has not changed since 1956. It is made with pale candy sugar and has a very pale color produced from a mash of light pilsener malts. Styrian Goldings hops are used along with some German varieties and the classic Saaz pilsener hop. After a long secondary fermentation, the Tripel Westmalle is bottled with a dose of sugar and yeast. Guldenberg is a high-fermenting, balanced bitter beer. The origin of the name comes from the former Guldenberg-abbey in Wevelgem where monks used to make beer. Tripel Karmeliet is still brewed to an authentic beer recipe from 1679 originating in the former Carmelite monastery in Dendermonde. Written over 300 years ago, this recipe describes the use of three kinds of grain: wheat, oats and barley. The name Tripel karmeliet thus refers both to its origin and its in-bottle refermentation. From many trial brews of multigrain tripels carried out at our brewery in the 90s, it appears that the particular historic combination of the 3 kinds of grain still remains the ideal blend. Père Noël is a Christmas ale, though very different from any other Christmas ales you might know. While most Christmas ales are rich & sweet, this one is amber-coloured, 7% vol. In Napoleon's time Pauwel Kwak was a brewer and the owner of the' De Hoorn' inn in Dendermonde. Mail coaches stopped there every day. But at that time coachmen were not allowed to leave their coach and horses in order to have their thirst quenched along with their passengers. As a result, the inventive innkeeper had a special Kwak glass blown that could be hung on the coach. In this way the coachman had his Kwak beer safely at hand. LOOK: Kwak is recognisable by its deep bright amber colour and a dense, creamy coloured head. The pale wood of the glass holder makes a pleasant contrast with the beer. SMELL: You will smell a mellow, fruity and malty aroma with a slightly spicy character (coriander, hops). Additional earthy and very subtle aromas of banana and perhaps also a whiff of pineapple or mango in the background. TASTE: Discover a very mellow, fruity attack, a nougat-like solidity, and a slightly spicy character with hints of liquorice passing into a warm finish that reminds you of caramelised banana.
