   My husband and I decided to try Republic Texas Tavern for our Valentine’s Day date night, so I made reservations. Upon first entering, the space looked warm and inviting and the hostess was so friendly and attentive. We didn’t have to wait long at all before our server came to greet us and offer assistance with the menu. Everything came out really promptly, but not so fast that we didn’t get to enjoy the pacing of the meal. (I don’t love it when you’ve just gotten your appetizer and your entree is coming out right on top of it). Our waiter even brought us a little bowl of the house made barbecue chips after I had commented on how delicious the house made tortilla chips were! Our meal consisted of: cocktails - a house margarita for my husband and I ordered a Kent’s Honey Bee (both of which had plenty of alcohol and were delicious), chips and dips platter (salsa, pimento cheese and guacamole dips with aforementioned homemade chips), the grilled salmon for me, with a broccolini mix and honey drizzle, and my husband had the steak frites with carmelized onion on top (it also comes with blue cheese on top, but my husband had them hold that part). We had a delicious bourbon bread pudding for dessert- oh my goodness… indulgence at its finest! They also had a special Valentine’s menu from which you could order if you wanted. It wasn’t a pre-fixe menu like many restaurants do, but rather a menu from which you could order whatever you wanted. The ambience was very cozy. We were seated in a huge oversized booth, and so we sat on the same side. It was very comfortable, and I could’ve honestly stayed there all night! My husband is somewhat particular when it comes to food, so he’s not easily impressed with most places - and he actually really liked this restaurant. For everything we ordered, the tab was very reasonable. We will definitely, without a doubt, be back!

   It’s not too often my expectations are far exceeded. My experience at Republic Texas Tavern did just that. From the time we entered the casual but appealing interior, were seated by the personable host, tended to by the helpful and friendly waitstaff led by “Bailey G”, until the last bite of the bourbon bread pudding… EVERYTHING was perfect! As I was eating the decently priced ($20) and recommended nightly special of pork ravioli, I noted how much it looked (and tasted) like something you’d pay much more for at one of the higher-end Italian joints in Dallas. Nothing I expected at a “Tavern”. I am not a bread pudding fan at all, but Bailey’s description and recommendation made us realize we needed to try it. And she did not lead us wrong! It was truly fantastic! I see some 1-star reviews, many related to the service, some directed at the food. Fortunately we must’ve been lucky and avoided issues with BOTH! Looking forward to future visits!

   Great bottles behind the bar and helful bar service. Table server was super friendly and on his game. Pork chop was super tender and flavorful. Wife's crusted fish with lemon cream sauce was somewhat under seasoned or under flavored, but perfectly cooked and enjoyable. Brussel sprouts were excellent and super crispy. We will be back.

    Disappointing. Ate at bar and was not even acknowledged for 10 minutes. Bartender was talking to other patrons (friends I believe). Food was just ok. Steak was right temp but had zero sear on it and under seasoned. Server brought out a cheese board, would have been nice if someone told us what the cheese's were. Bartender rarely checked in with us.
