    We are so fortunate to have such an interesting and unique restaurant in Fort Collins. The ceviche style bass has one of the most flavorful citrus sauces I’ve ever encountered. The ribeye with mole and black beans were authentic, while creating their own signature smoky taste. Virtually everything we had was perfect: from mock tails to guava dessert. Heidi was our server, and she is excellent. She can guide you through the menu and provide great service on top. Madre is the new favorite in our restaurant rotation.

    We had a wonderful belated Valentine's Day dinner here. Our intent was to try a new restaurant, and Madre Cocina seemed like it had an interesting menu. The food and service were amazing. We started with the creamed corn and two different tacos. All of that was incredible. We then moved on to our mains. One of us had the sea bass, and the other had the plantain enchiladas. Both were beautifully plated and absolutely delicious. Finally, we settled on sharing the guava dessert from the weekly choices of dessert. Again, the plating was gorgeous, and the balance of flavors was perfect. It was definitely a little more of a splurge than we usually do when we go out, but it was well worth it, and we are both talking about what to try next time. The ambiance was calm and not too crowded, and the noise level was perfect for not feeling like we were being listened to but still being able to have a conversation at a normal volume. Our server, Daniel, was so pleasant and polite. He even shared information on the origin of some of the foods and menu items. He was very knowledgable about the restaurant, menu, drinks, and even the process for sourcing and making the food we ordered. A small thing, too, but all of the staff worked seamlessly together and seemed to genuinely be helping each other and taking care of each other. The way they were able to pass off food, drinks, water pitchers, etc. was practically a work of art, and they did seem to be working together as a team. This is probably a major contributor to the fantastic service.

    Madre has such a cool vibe and thoughtful food. The family that owns Madre seem to have so much passion for the restaurant business and care so much about their service and the food/drinks. The cocktails are amazing.

    We were curious about this place after Blind Pig closed and wanted to give it a try. We both had the Madre margarita which was well balanced and easy to drink but was mostly ice so you're not getting what you pay for. We ordered the guacamole which was fine but you have to break apart large fried corn tortillas to make your own chips, which we didn't love. I had the Taco de Panza de Planchada which was tasty but overpriced for how tiny it was (honestly it felt like they put a thick strip of bacon in a taco and called it pork belly). I also ordered the Aguachile Tatemado which I had assumed would be similar to ceviche. I wish I had read the reviews. It came out in a black sauce with very large shrimp and not chopped up at all. I think this may have caused an issue with the lime juice not being able to properly get to the center of the shrimp so the texture was off-putting and I barely ate any of it. My husband had the Asada Madre and he said it was ok but he wouldn't get it again. The service was attentive and very friendly and the renovations were very nicely done. However, I don't think we'll be coming back for a very long time. When we got home we had to eat some takeout from Torchy's as we were hungry and unsatisfied.

    First time experience for us. A Valentine day date night. What an amazing time. Heidi took such good care of us and put up with all our questions. She schooled us on Mole' , many things I did not know. The food was phenomenal! Barbacoa De Picana, Pollo Almendrado This is not a typical Tex-Mex restaurant, it is authentic Mexican cuisine. The wait staff was very attentive despite being a busy Valentine crowd. Planning on re-visiting to try out more dishes. By the way, the deserts are also amazing. Textura de Guayaba Go there to eat, now!
