With a mission to deliver hearty culinary experience. with Japanese spirit.we have started the Kishin Project in Kyoto.
The word Kishin comes from zen. The literal meaning of 喜心 is joyful mind. The character “食” (meaning meal in Japanese) is structured with a combination of the characters “人” (meaning　person) and “良” (meaning good);Kishin is based on a belief that preparing and having a meals are all part of training, and therefore should all be regarded as a precious and joyful act in a daily life.Now there are two Breakfast Kishin restaurants in Japan. Breakfast Kishin provides a Japanese cuisine experience through local style breakfast, with a particular focus on using fresh, local ingredients.And sometimes they are places for guest chefs to meet with the locals and visitors, and vice versa.
The visiting chefs will open a pop-up restaurant for a limited time. With professional grade facilities, it is an ideal place for the visiting chefs to fully express themselves.

ゆっくりいただく朝ごはんっていいですね。スタッフの方も感じがよく、優雅なひとときを過ごすことができました。時間によって変化するお米の食感を楽しめました。また伺いたいと思います。

Breakfast with wife & toddler. Superb experience all around. You get to choose your own bowl of rice. Recommend adding raw eggs for rice

初めていきました。渋滞に巻き込まれて予約の時間に間に合わなかったのですが、次の回で案内していただきとても助かりました。接客も丁寧で、ごはんもとても美味しく楽しい時間でした。ぜひまた行きたいです！

30分以上予約時間に遅れてしまいご迷惑をお掛けしました。でも、スタッフの方々全員で気持ち良くもてなしていただけて感謝しております。お料理も、サーブのタイミングから接客まで素晴らしいと思います。季節限定のお雑煮が絶品でした！是非、又行きます。

静かで穏やかな雰囲気の中、ゆっくり朝食を頂くことができました。白米の美味しいこと！少しずつ盛ってくださるので、炊き立てから　お焦げまで時間の経過と共に変化するお米を味わえました。一緒に供されるお魚、そして汁物（1月は鹿児島又は京都のお雑煮）も丁寧に作られ、大変美味しかったです。お店の方の心配りも素敵でした。ご馳走様でした。

鎌倉駅から近く、人混みから遠ざかれる少し離れたところにあってとても落ち着いていました。白米を炊け具合によって4,5回に分けて食べる、お茶碗の出産地と作り主を説明してくれたり、一つ一つに対する愛情、意味、感謝の気持ちが、普段忘れていた食べ物に対する姿勢を思い出させてくれました。
