J Carver's Oyster Bar & Chophouse features market fresh oysters & premium wood grilled steaks. Nestled in West 6th District of Downtown Austin, John Carver, Owner and Chef delivers an elevated classic fine dining experience featuring a gorgeous raw & oyster bar and intimate dining experience.

In order to honor all reservations booked, we ask that all bookings adhere to our suggested dining time frame. Please contact our reservationist if you have additional questions. Our time frames are as follows
2 people - 2 hours
3 people - 2 hr 15 minutes
4-5 people - 2 hr 30 minutes
6-7 people - 2hr 45 minutes
8+ people - 3 hours

    This was our first time to J. Carver's since moving downtown in December and it far-exceeded expectations...it was an awesome experience, amazing food & cocktails, and the ambience was fantastic...we will be regulars!

    Truly loved my experience here. Nice ambience inside and the food was immaculate. J Carver’s made my birthday celebration extra special. I had their Chile Shrimp for appetizer which was one of the highlights with a filet mignon and their chocolate cake!

    It was exceptional. We have our new go to for steak in Austin. And it’s a pleasant surprise when the sides are as amazing as the steak! Excellent dry aged tomahawk ribeye for two, sides, crab cakes and bananas foster bread pudding!!! Pur server Brittany was above and beyond!

    I had another fantastic experience at J Carver! The food was absolutely delicious, and the service was terrific. A big shoutout to my friends Andrew Penridge and Tate, the bartender, for making my girl's birthday special.

    J. Carvers gives exceptional service! I have been so pleased with the staff and even the valet guys. They remembered my name...lol. The food is incredible and everything I have chosen is delicious. And the Godfather cocktail is #1. I have asked for it at other restaurants and there is absolutely no comparison.

    We love coming to J. Carver’s to celebrate anniversaries and birthdays sitting at the bar. They are so attentive and always have a nice hand written note for us. The bananas foster bread pudding is a MUST HAVE.

    We absolutely loved our dinner while we sat at the bar. The bar seats are very comfortable. The bartender was on it with our drinks and food, very nice and enjoyed talking to him. Food was amazing!! We definitely need to go here more!

    This is always a top spot for me in Austin. Sitting at the bar if you are a party of two is so much fun. The bartenders are always friendly and helpful in suggesting unique drinks and with the menu. I will be back over and over again.
