   Gibson’s still, after all these years, has their act together. Reservation was honored on time, friendly professional staff, and food consistently great.

   This is the most underwhelming steakhouse I’ve been to. I made a reservation for my birthday, and in my previous experiences at other steakhouses, booking through OpenTable has made me feel welcomed, with a birthday greeting upon arrival. Unfortunately, I did not receive any birthday recognition here. The complimentary bread served at the table was rock-hard and cold. While the butter was delicious, the bread itself was very chewy. My boyfriend ordered the Chicago cut, and I ordered the ribeye cooked medium-well. However, my ribeye arrived rare and had to be sent back. The waiter was wonderful, informing me that it was still rare when he returned it, and allowed me to cut into the center. I dislike sending food back, but I had to return the steak twice because the kitchen couldn't get it right. After two attempts, all I could taste was a charred crust. The sides were bland and basic—nothing special, easily found at any other restaurant. By the time the meal was over, I was so disappointed with the steak that I didn’t even bother ordering a birthday dessert.

   It was the absolute Gibsons Experience. Absolutely lovely. We chose to sit in the bar; we welcomed the noise & cheer. The shrimp cocktail, my son's steak? Fabulous. We debated the mashed potatoes. Too much salt? We think not. My son loved the cocktails. And our server

   The food was amazing. The service was outstanding. We were well taken care of. Unfortunately the table next to us was extremely loud, obnoxious, and highly inappropriate with some of their conversations.

   Although we mistakenly checked in for our dinner reservation 30 minutes too early (my bad) the hostess was very sweet and accommodating, which put us instantly at ease. Gibson’s on a Saturday night is really busy, but there’s a reason, as we were to discover, because the ambiance, service, and food, are worth facing the crowds. The bar was far too packed to sit so we hung out next door at Hugo’s Frog Bar, and as the hostess promised, we received a text shortly afterwards announcing that our table was ready. FOOD: We often share when dining out, and the portions at Gibson’s are very reasonable. We shared the W.R.'S Chicago Cut 22 Oz rib-eye and a wonderfully prepared creamed spinach. Our main entrée may be the most delicious “melt in your mouth” steak we’ve ever had. Right down to the last bite, it was cooked to a perfect medium/medium rare, with very little gristle or fat. The one item we didn’t share were two excellent Classic Vodka Martinis (with 3 giant olives). For desert we had a scrumptious ice cream with house-made whipped cream. SERVICE: Our waiter (Elvis) approaches his work like an art form. He’s extraordinarily detailed, leaving nothing out. He also offers “insider” food and drink recommendations, which not surprisingly, were perfect. In spite of Gibson’s being a high-end, globally iconic restaurant, Elvis was not pretentious. Indeed, he was genuinely friendly, a “behavior” that can’t be “trained.” You either truly like people or you don’t. Elvis is an authentic “experience,” and when we return, we’ll insist we get a table in his station. AMBIANCE: The dining room, while large, with occasional bursts of laughter and other assorted underlying noises, still possessed a wonderfully cozy feel to it. Perhaps it’s the mere fact that everyone is enjoying themselves, but you certainly won’t feel overwhelmed. COST: Before tip, about $145.00, about what you would expect for great food and equally attentive and personalized service. Will we return? ABSOLUTELY!

    Rich is such a fantastic server! He really helped ensure that we had a wonderful experience - very knowledgeable about all of the items on the menu and suggested sides. Our food was absolutely delicious and prepared perfectly. Already looking forward to the next time we can visit!
