The name "Former Saint" pays homage to the rich history of our location. In 1864, three pioneering Sisters of Loretto journeyed from Santa Fe to Denver to establish St. Mary’s Academy, which operated until 1910. Inspired by this pioneering spirit, our menu celebrates Colorado's adventurous spirit with thoughtfully crafted dishes and a commitment to sustainability.     One of the worst dining experiences I've ever had. Service was unacceptable. Food was pretty good but wait staff disappeared between courses and never cleared our plates from previous courses. I had to ask them to clear our full table before they brought out dessert. Brought out one dessert with the mains! We were there for restaurant week but they definitely did not impress. The manager gave us credit for the bad experience but it didn't make up for the overall disappointment.

    We went for restaurant week. The appetizers were good, but the main courses were not. You shouldn’t serve bison if you don’t know how it needs to be cooked. The sides tasted like they were cooked hours ago. Disappointed with the quality and portions considering the price. Very overpriced.

    This is a nice, if not really large, hotel restaurant. It's a little cold as any giant hotel lobby restaurant might be, which just what it is, being inside the Hyatt Regency. But they do a nice job. We sat at the bar and enjoyed a hamburger which was sadly overcooked but still tasty, chicken and waffles which were great, and brussels sprouts which were good. Overall, about as expected but if you're looking for something more like an intimate restaurant with local vibe, I'd say it might not be top of your list. But highly recommend if you're meeting a group of friends and need room to spread out--the service was great.

    The food came out quick which was great because we had theater tickets. My friends enjoyed their burgers, I felt like my salad was overpriced. Only downside- we waited a bit for our server to get us the check and then run our credit cards.

    Great spot. Highly recommend. Ate there a few times during a conference - lunch and dinner. Our waitress (Nana) was very helpful and we were happy to be seated with her two nights in a row!

    The Risotto was terrific, however, it came out so fast we could not finish our app. It felt a little rushed.

    Very nice dinner near the DCPA. Perfect for a pre-show dinner. The fried eggplant was some of the best we have ever had.

    When I walked in the two hostesses did not greet me or offer me a seat. They seemed to be gossiping and looked at me standing in front of them and completely ignored me.

    We had an outstanding night with a phenomenal dinner and great service. It was the perfect way to spend Valentine’s Day together. We will definitely be coming back for more special events.
