The restaurant, led by award-winning chef José Andrés, honors Peru’s deeply rooted and diverse heritage, including its native Criollo, Chinese Chifa and Japanese Nikkei cuisines; its name an homage to Peru’s renowned fish stew and its popular national drink, the Chilcano.

Loma saltado and dim sum were delicious! Ambiance and food presentation was great. Service was excellent, food came quick and all servers were customer focused. Enjoyed dinner here on a week night prior to event at Capital One Arena.

The food was decent. Nothing to rave about. Definitely more Asian influence than traditional Peruvian. Had a nice booth in the back of restaurant away from the bar. Every 5 minutes an obnoxious air handling unit or something above us would make this train like rumbling sound for 5-10 minutes making it impossible to have a decent conversation and the annoying pitch just disrupted the entire vibe and experience. This is the second or 3rd of chef Andres' restaurants we've been too. Underwhelmed by each of them. Love the man and support his charities but these DC restaurants leave something to be desired. Not sure if we'll go back next time we're in town or try something different.

We had the more expensive of the two tasting menus. Every bite of food was full of flavor and delicious! Two items that could have been better: personally didn’t care for the chefs take on California Rolls — two doughy. It was a texture thing. And I’d have much preferred the wine tastings be more red focused or at least balanced. White wines were a bit sweet for the tasting. The service was fantastic! This is a great place and we will be back!

I am a huge fan of all of the Jose Andres restaurants and China Chilcano is one of my favorites. The Lucky Twelve dim sum entree includes four pieces of each of the dumplings the restaurant offers, and all are delicious. For those not into dumplings, there are numerous diverse entrees. I'll return and frequently recommend this restaurant to my friends.

Such a nice surprise on our first visit to DC. The ceviche was delicious, the noodle dish was savory, the dim sum with Szechuan sauce was so flavorful! We want to come back while we are here for 4 more days!

I've been to China Chilcano a few times, but I think this was my most enjoyable visit. Everything I had was excellent, the flavors well balanced, and there was a nice diversity to choose from on the menu. I have an unusual dietary restriction, and the wait staff and kitchen were very helpful and accommodating. The meats were savory and cooked exactly as we requested. I particularly enjoyed the pork belly bao (thank you to the server who explained everything and warned us which of the sauces packed a punch). The drinks emphasized Peruvian and Japanese liquors, playing off of those flavors to good effect. The dining room is slightly cramped and a little noisy, but neither is severe enough to present a real problem -- it is bustling and energetic without quite pushing into overwhelming. An enjoyable meal all around, and I'm sure we will be back.
