   We enjoyed the atmosphere, the romantic lighting, the music playing, and the smaller scale of the dining area which gave it a very peaceful vibe. The service from Carlos and all the staff is great, so friendly and ready to accommodate anything you need. You can tell they really care about your experience while dining. The food was delicious and they had an impressive variety of specials to choose from along with a nice menu to choose from. We brought our 6 year old with us and they happily offered to prepare kid friendly options for him. The Pinot noir I ordered was really good too.

   This was our first time ever there and it was an experience of a life time for sure. I will go back again. The food was absolutely amazing. The Staff was knowledgeable on all items on the menu and the specials. highly recommend it.

   Delightful experience and atmosphere! Carlos is an amazing personality and makes the meal entertaining as well as delicious. Liz, our server, asked each of us our names and then called us by name all evening. She was very knowledgeable and helpful in making selections that we all enjoyed. We will be back!

   As always, Carlos' delivers excellent service and food. Our family continues to enjoy this special meal, and reserve time for it approximately once a year. We leave with beautiful memories and very full stomachs! Thank you again to everyone involved in delivering such a wonderful evening.

   From the moment we arrived until we left, Carlos and Stephanie were very attentive. Hubby and I ordered mostly from the specials. The dishes were all well prepared and presented, not to mention, delicious. Carlos’ old fashioned is also the best we’ve had. We will definitely return.

   We’ve lived in the local area all our lives and haven’t had a chance to experience this restaurant until recently. WOW! I can see why it’s standing the test of time! The food was EXCELLENT and the service was EXCEPTIONAL! I’d give it more stars if I could!

   Beautiful restaurant. Excellent service. The food was phenomenal! Our entrees were prime ribeye and filet stroganoff. So delicious! The desserts were creme brûlée and the most decadent chocolate truffle! It is not cheap but we didn’t expect food of this caliber to be inexpensive.

   From the initial greeting by name to the final goodnight, Carlos' Bistro was a fantastic experience. Carlos himself was friendly and welcoming while sharing stories . We started with cocktails and the avocado egg rolls. Delicious. We followed that with a wedge salad that was awesome. We learned the secret ingredient was a vodka blue cheese dressing. Our server skillfully helped our entree selections of Filet mignon and a tomahawk pork chop. The pork chop was probably the best I have ever had. Juicy and tender with apple brandy reduction over saffron risotto. My companion ate her entire filet which is a rarity . I wish we had room to try the deserts but. It was time to leave. We spent 2 weeks in Colorado Springs eating out for every dinner. This was hands down our best meal. Thank you Carlos and team!
