Christopher Hirsheimer and Melissa Hamilton—the women behind Canal House Station—are cooks, writers, and artists. In 2007 they founded Canal House, which includes a publishing venture and a culinary, photography, and design studio. Their cookbook "Canal House Cooks Every Day" received a James Beard Award in 2012.

In 2019, Christopher and Melissa opened Canal House Station, a hidden gem tucked into an elegantly restored 1870s train station on the banks of the Delaware River in Milford, NJ. Their idiosyncratic, modern American cuisine is inspired by local ingredients that are ripe and in season in Hunterdon and Bucks County. They are two women, cooking together, and sharing their love of gathering people around the table to eat good food. They have been nominated twice for a James Beard Foundation “Best Chef: Mid Atlantic” award.

Canal House Station offers "Sunday Dinner" every Sunday. It is available for Private & Corporate Events, and Celebratory Gatherings throughout the year.

    I expected the food to be Michelin quality based on reviews I had read was not anywhere close to that I’ve had Michelin quality meals, all around the world, but rarely in the Philadelphia New Jersey area. Sad to say the food was mediocre and pedestrian and this was his opinion shared by my two guests who are true gourmet’s my wife and son both being Chinese. I assure you the Chinese know a thing or two about fine dining and gourmet cooking my wife who is born in China and is one of their leading attorneys and who has died in the most interesting restaurants, Café, and even from local street carts has quite a refined pallet. I have shared many non-Chinese restaurants with her. I would not recommend this restaurant to our friends said to say, I hoped for a different experience.

    The Best all around meal I've ever been served..wait staff was spot on..ambience at a perfect level..Here in Jersey they don't do Michelin Stars ..too bad ...Canal House Station would be winning Many! They cook how people want to eat..

    Every meal we have had here has been delicious. The building holds great charm and the simple and elegant decor is very inviting. It is our favorite restaurant by far and we are very hard to please....we are picky!! We love how they make simple yet delicious meals which are not overdone with spices and a million flavors. They bring out the essence of the food....and they are two charming women...

    Simply one of the finest restaurants on the East Coast. All the guests there were enjoying themselves in peaceful happiness. The meal was beyond excellent, and yet you don’t feel stuffed when you leave the table. Words aren’t enough; you have to go there!
