Maybe a warm welcome, comfortable and stylish atmosphere, attentive service, talented chef, knowledgeable sommelier, clean toilets? Sounds easy but so often I’m disappointed by places that can’t deliver these basic elements. Clava, in West Byfleet, opened a couple of years ago by Chef Valentino, does all of this with effortless competence. It becomes self-evident when you’re eating food that takes years of training and practice, days of preparation and moments of brilliance to deliver. It doesn’t want or need Michelin praise, it’s so good. I hesitate to share this because I want to be able to get a table before word gets out. The fact it was packed on a Tuesday night when other restaurants in Fleet high street weren’t says something. Great food and great service. The salad presentation with the meat dishes was outstanding. Yeah it’s a bit noisy as it’s family orientated mid week and lots of birthday celebrations.
