In showing this building some love, local businesswoman Shoes Simes has said that she hopes to help make her pub more food-led and family-friendly. In doing so she hopes to turn this local building of historical importance into an establishment for local families and friends to enjoy together. It all started 13 years ago when she first saw the building and she knew straight away that this was the pub for her and finally her dreams have come true, with a full refurbishment, this pub is now ready to be revealed to Eastbourne in all its glory. Once functioning as an old Moot Court, eventually turning into a restaurant in the 1970s, before it boomed as a pub trading as The Rainbow. It eventually changed to The Counting House and saw a new lease of life as the garden grew to be a popular haunt of all in old town. Returning with a change of name to the older style of The Rainbow, and with it a focus on food again. For outdoor reservations, please contact the restaurant directly.

We’re proud to say that Brighton was the second ever Bill’s, and whilst it’s no longer a bus depot (spoiler, it used to be a bus depot), it still transports you to the good times. Oh, and it’s only up the road from the seafront, so there’s no excuse to miss it, even if you get lost in the Lanes.

    Sonia was our waitress - she was absolutely fantastic. She was on top of everything and so polite and interesting. The cheese soufflé was outstanding - as was the ribeye steak along with spinach and chunky chips. Yumbo!!! The Rose wine was delicious too - just the inexpensive one at the top of the rose list. Try it

    It was a wonderful evening and the food and service fantastic . The only disappointment came from my 18 yo daughter , her friend and my son who is older were ID checked and because they didn’t have their passports or any ID with them , they were refused wine with their meal and any drinks which slightly changed the celebratory occasion. We don’t normally drink but on a special night out we would not have expected to have this to have been refused. I belive that they should tell diners when booking g that without ID they will be refused alcohol . Never has this ever happened before in my life time of dining out with my family. I am 56 and my husband 66 so it was a shock.

    Had a great Monday brunch. Good ambience which is often hard to find early in the week, we were glad we had booked although I think there were still a few tables empty. Food was good with ample options for gluten and dairy free intolerances. Staff were delightful and professional. All round great experience with a sea view too. Will definitely return.

    Food was served quickly, lovely and hot. Sadly they had run out of Sunday Roasts in the evening when we arrived but selection on menu was good. Great they serve food until 10pm. We joined in the pub quiz which was good fun too.
