Roasted vegetables, potatoes, and dessert were excellent. A very nice evening. Very nice wine pairings. We had the Italian-style wagyu burger and the BCS lamb, which were both excellent. The show-stopper, though, was the lobster ravioli, which was MUCH more lobster than ravioli and featured Korean spices, kimchi spiced greens and kelp oil. We were so impressed with this dish that we had to ask specifically about the ingredients. Sometimes restaurants try to make ordinary food sound extraordinary by using fancy words to describe it, but this menu felt like the opposite. This was an east-meets-west mashup of fascinating ingredients and extraordinary techniques that was presented without fuss or pretension. We ski every year at Apex and the last two years we have noticed that the Gunbarrel saloon has disappointed us. We used to look forward to the Gunbarrel but this year and last year the food took a long time during lunch time to get to us and the food quality and selection has gotten worse. There was a private event in the other dining room on Wednesday around noon which was probably the cause of the slow food service. Please block tables if the chefs can’t keep up with the food preparations. My wife and I almost cancelled our Longshot’s reservation due to the decline of the Gunbarrel saloon.
