Heralded as a "meat speakeasy" by Food & Wine Magazine, chi SPACCA has come to represent the quintessential new Italian dining experience, where accompaniments like the Foccacia di Recco, warm salted Medjool dates, and Culatello & Puglia burrata are just sideshows for the rest of Chef Armen Ayvazyan's wood-fired menu which features a 42-ounce Tomahawk pork chop, a 36-ounce dry-aged bone-in New York Costata alla Fiorentina, and a 50-ounce dry-aged porterhouse Bistecca Fiorentina.Enchanted by the artistry of Italian salumi culture, we built the first “dry cure” program in Los Angeles so that we could experiment and perfect Italian charcuterie techniques in house.

The most stand out point at our visit was the restaurant's impeccable service. They were very meticulous in creating a pregnancy friendly meal for me and explaining each component of my substitutions during the meal. When asked how each course was prepared, they responded with detailed answers. One suggestion I would make is to have the host/hostess offer suggestions on which entree to choose for a special diet customer. I did have to proactively ask about how the wagyu & duck entrees were normally cooked as I assumed they are served medium rare (too undercooked for a pregnant woman). However, they did kindly offer to cook them well done for me when I asked. Other than that, I fully enjoyed majority of the courses. The only course I didn't enjoy was the silken tofu substitute for the sashimi course. I felt the pickled component overpowered the delicate tofu and threw the dish off balance. My husband absolutely enjoyed the dessert courses especially the chocolate petit fours.

This was my first time indulging in Bavel and I’m surprised it took me this long! The food was better than I expected and definitely is a standout in terms of unique flavor that go beyond the normal LA food scene taste. The service is one to admire - excellent timing and a great explanation of every dish. We especially appreciated the napkin folding during “bathroom breaks”. Can’t stop thinking about the celery root and rack of lamb.
