- GGregMinneapolis - St. Paul •22 reviews4.0Dined on Feb 15, 2025While it is exciting to have a distillery experience in the ultra-suburbia that is Eden Prairie, especially one that leans forward on live music, I couldn't help but to feel like I was witnessing the end of the urban chic trend that has been pervasive in brewery and distillery spaces since the format blew up around the Twin Cities. While places like Tin Whiskers in St. Paul and Tattersall in Minneapolis fold, the difference here is that people in Eden Prairie tend to have more money and may not want to hoof it to the city to get their upscale gin cocktail. But they do want to have plentiful parking options, and I noticed that parking could be limited during a busy visit to Flying Dutchman. The drinks were plenty delicious here, and I recommend a visit overall. But I'm still not sure how I feel about ordering and transacting entirely over an app when staff people are standing nearby waiting to receive those orders from a computer screen. That feels like a missed opportunity to engage further and make the patron feel special for taking the time to find the place in the back of a nondescript office building. This review probably sounds negative, but it's not. I look forward to going back. But because I make a habit of trying as many new places as I can around the Twin Towns, I'm constantly in search of things that separate one place from another. The musical stage was a big win here, as was the attention to decor. I always worry about the size of a place, knowing that margins are thin, and this place is huge. But maybe, because of the location, the rent is way lower than someplace like Modist Brewing or Dual Citizen. This place is big like Fat Pants across town or Luce Line in nearby Plymouth. The money is the same as what I spend at the more traditional breakfast places. Staff was much nicer and I feel the food was better.
