Drinks were made well and the mixed properly. Not watered down. Service: Our server Noeli ( Sorry, unsure of how to spell her name,) was absolutely AMAZING. It was Valentine’s Day weekend but we did not feel like it was at all. She was extremely communicative and very prompt. We have not experienced service this great in quite some time! Absolutely phenomenal. She deserves to be a manager and train new servers in how to execute amazing service regardless of a busy environment. Ambiance: Valentine’s Day weekend. Very busy. There was a bit of a wait even with reservations but it was lovely. The charcuterie board was good, ,the gorgonzola stuffed figs wrapped in prosciutto was amazing and the pear and walnut flat bread was out of this world. The kitchen was a little slow, but it is a small establishment and our server told us the kitchen was backed up. This didn’t disappoint! Our server Belle was attentive from the start. We were sat outside but it was well covered and the weather was perfect.We did bring our own wine because Its our favorite for our celebration but they charge a small corkage fee which is more than fair at 35 flower first 2 bottles. Apps were delicious their take on focaccia was wonderful and the house Cesar salad spot on The flexibility with the menu is amazing especially for those with various allergies. You can ge thskfnorkfjins do the pasta and they have great house made pasta but note they do cook it Al dente so if you prefer softer ask. The grilled chicken ,veal ravioli and their take on a veal parm were outstanding! It will be hard to try other items when you find ones you already love. Belle surprised my fiance with an affogato for desert because she knew that’s what she wanted and then An additional surprise champagne toast for us. Also between courses at one point the manager came out and addressed us by last name which is a really nice extra step of service to make us feel known and taking that time to check the name really says a lot about their approach and value of us the guest! We have eaten at a lot of the top restaurants around the Disney area and beyond, and we truly feel that Ceiba was the best. Food was phenomenal, atmosphere is gorgeous, and service was top rate (Mimi was superb). Our flight was delayed, and we had to push our 9:00 PM reservation to 9:30 PM. Unfortunately, we didn’t arrive until 9:50 PM. just as the restaurant was closing, but the staff still welcomed us warmly and graciously seated us without hesitation. Our waiter was exceptional—incredibly kind, patient, and knowledgeable. He took the time to explain the menu to us and ensured we felt completely at ease as we were trying to finish our meal before the final shuttle departed at 11 PM. Despite the late hour, our food was made fresh and arrived piping hot, showcasing the care and dedication of the kitchen staff. I ordered the scallops with risotto, and they were hands down the best scallops I’ve ever had—perfectly seared and incredibly flavorful. My husband had the lamb chops, cooked to absolute perfection, and our teens enjoyed the bolognese, which was rich, comforting, and delicious. We were also celebrating my son’s birthday, and the waiter surprised us with a complimentary ice cream to take with us, beautifully topped with chocolate shavings that spelled out Happy Birthday—such a thoughtful and generous gesture! Even though we were dining past closing time, we never felt rushed or like a burden. Instead, we were treated with genuine hospitality and kindness, making the experience unforgettable. A heartfelt thank you to the entire Sophia’s Trattoria team for going above and beyond. Your incredible service, outstanding food, and warm hospitality made our night so special.
