Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar.     Definitely enjoyed all the food here (an app, two ceviches, two tacos, carne asada, bass). All amazing, fresh, flavorful. Sitting at the chef’s table was a great choice. Staff was wonderful! Avocado margarita was lovely. I only say noise level was moderate because it was busy which is good!

    A great first experience! Every staff member we interacted with was friendly, energetic, and knowledgeable. The food was great, and the portions were generous. Highly recommend the Crispy Brussel Sprouts - the best we've ever had! But the stars of the show are the ciders! It was hard to pick a favorite - a reason to return and try a few more! We will definitely return again next time we're in the Denver area.

    My wife and I were delighted by the elegant bar that is reminiscent of the best saloons of San Francisco. Great food, carefully presented and served. Servers were pleased to chat and answer questions about food and details of the sculpted bar. Great deserts topped off a memorable meal on a lovely snowy night at the best restaurant in the area.

    Jason was fantastic. Explained everything well. Great sense of humor! Very good at working the table. Drinks never went empty. Good at getting to the table to ask if we ever needed anything. One of the better wait staff I have ever had in my life. Made the experience top notch. Hard to find great people that take pride in their work like this.
