As soon as Amy Chanta flung open the doors in 1989 Chat Thai became an instant smash hit with Sydney diners already familiar with Thailand and no appetite for compromising on ingredients, flavours, textures and aromas. We had always wanted to open a restaurant, but never imagined we’d find one in such a perfect location.
