Joseph’s Culinary Pub is a creation of Chef Wrede and his creative and business partners. This is the third incarnation of Wrede’s original Joseph’s Table, conceived in Taos, New Mexico, not quite 20 years ago, for which he is well known and loved within the region and beyond. Joseph’s Culinary Pub is designed to be a platform for Chef Wrede’s unique and uncompromising vision on traditional and contemporary cuisine, both regional and international. Regarding the restaurant as a process much like theater, Wrede envisions the experience of dining in his restaurant as an interactive play between the pub and the public, with his sights aimed at rivaling high art.

The name Zacatlán surged from the origins of our chef, Eduardo Rodriguez. He was born in Zacatecas, Mexico (north-central Mexico), which is defined as "the habitants of the land where grass grows". Zacatlán is the nahuatl translation for "land with an abundance of grass", and that is where our idea of Zacatlán Restaurant began. Zacatlán Restaurant desires to continue to preserve the traditions for our upcoming generations, while bringing forth new flavors. These new flavors incorporate Southwestern and Mexican influences.     Restaurant Martin is my favorite restaurant here in Santa Fe, primarily because it offers a sublime menu combined with a refined but not stuffy atmosphere. I also enjoy the fact that the dining areas are spaced in such a way so as to not find yourself trying to hear over the noise of other conversations. The staff is courteous, and available without feeling overbearing and I've never had any meal that didn't delight my taste buds.

    Dining at Joseph’s is always a treat. Jeff, our favorite server, is the consummate professional. The dishes speak for themselves- interesting and delicious. You can choose to spend a lot, or not, depending on your selection(s). Regardless, you won’t be disappointed. The wine list is excellent, too!

    We had a really good dining experience with Carmen attending to us really well, in spite of a very full dining room on a Saturday night (glad we made reservations!) - I asked for additional support on my meal, and Carmen went above and beyond to ensure we received an excellent meal that was well cooked. The crab cakes, salmon fish and chips, and salmon salad (best dish of the 3) were pretty good at happy hour, but what we remember most is how attentive our server, Carmen, was (and not overly so). The house wine was a better selection on a previous visit, and we passed on the house white (Chardonnay). There is no beer on draft offered, but the IPA was pretty good and served in a thick glass beer mug. At about 6 pm on Saturday, the dining room was full, with a very loud crowd - our humble recommendation is to sit away from the main dining room if you want to have a good conversation over dinner.

    We had the most lovely dinner at Zacatlan. Our server was just the most gracious and hospitable man. The food, as always, was amazing (do not miss the cochinita pibil), but the feeling of warmth and hospitality is something missing from so many restaurants now, but not at Zacatlan. Highly recommend for both food and ambience.

    As always, an exemplary dining experience. Delicious appetizers and main dishes: roasted beet salad, mushroom bisque, pork shank, and rack of lamb. Ambience and service were top-notch. Servers were friendly and professional. I have two very minor complaints, and both involve the bread. Geronimo’s used to deliver an impressive bucket of bread with long pieces of lavage oriented vertically, creating an impressive architectural display! Now, it appears they have shifted to more of a standard issue bread basket, which included two types of bread and several pieces of delicious lavash. While eating our main dish, we requested some additional lavash and butter. I expected that we’d get a fresh bowl of lavash and butter. Instead, the server put a couple of pieces of lavash in our existing bread basket and didn’t bring any butter. Not a big deal, but what could have been an absolutely perfect meal was slightly marred by the disappointing bread issues and somewhat stingy refill. Bring back your beautiful bread buckets!!!
