The meal started with a little parsnip taste from the kitchen with a black truffle and some sort of cream. We followed that with duck wings that were awesome and then had some of the Brussels that came on the foie Gras…awesome. The thing that really stood out though was the fry in the duck breast. They somehow got the fat rendered and kept the meat moist with getting a hard fry on the breading. Yum. The cigarettes and chocolate dessert was also great. As a vegan, my husband especially appreciated the creativity to bring “seafood” to the fore. The caviar plate delighted us with the combination of pickled shallots, capers,fresh herbs and the surprisingly decadent finger lime crème fraiche. Each dish was beautifully composed and well balanced, highlighting very unique ingredients: chiogga beets, Okinawa sweet potatoes, kinome leaf, tamarillos. Wine pairings were perfect.
