- DDebraDenver / Colorado •1 review5.0Dined 1 day agoDining at the Populus Hotel was a unique experience from the mushroom “leather” sheets hanging above the bar to the ambience forest sounds playing in the elevator. the food was incredibly delicious and the personnel were very friendly but authentic in their manner of serving. I was fascinated watching the actual hotel guests walk in and out. It was a hotel filled with interesting people. We had appetizers and drinks below at Pasque and then went to the other restaurant, Stellar Jay on the roof and continued our dinner. The food in both places was excellent, the wood smoked quality that many restaurants boast about in Denver was better actualizad at these two restaurants and gave the restaurants a welcoming sweet Smokey smell. Everyone got a gingerbread house kit, a delicious birria arepa, and a cocktail or mocktail. There was also a DJ playing holiday music. We had a great time building our houses, which came out cute, and really appreciated not having to clean up our icing mess! This is a fun activity I would recommend to friends or families. We were two generations of adults, but there were a few kids there. Most were 20 and 30-something’s.
