My 11 year old son has celiac disease and is always incredibly concerned about kitchens not taking his need for gluten free food to heart. We told Gustavo about his gluten allergy right when we sat down and was as very understanding and accommodating and brought us a GF menu. Once our food arrived we noticed our son was not eating—we asked him why and he said he was worried about cross contamination. We pulled Gustavo aside and told him our son was concerned and struggling to eat and we asked if he could reassure him that his food was In fact GF. Sweet Gustavo went over to our son and talked to him about how the kitchen made accommodations for his food and the chef was aware and he pinky promised him (they did the handshake and all) that everything was in fact GF and that he made sure of it, checking multiple times with the kitchen staff. My husband and I literally started crying cause we were so moved by his sensitivity, attention and kindness to our son who is so insecure when we go out to eat. That kind of sensitivity and attention is not something you come across everyday and we are immensely grateful.
