Ernest's Dining Room at NAIT has been aptly described as the "jewel in the crown" of Hokanson Centre for Culinary Arts in the School of Skilled Trades. Ernest's decor is described as "understated elegance". Tasteful compliments of cherry wood and brass highlights, a beautiful rock feature wall, muted lighting and attention to detail provide the room with a distinct corporate ambience. Critically acclaimed and numerous accolades identify the "haute cuisine" prepared by second year Culinary Arts diploma students as "outstanding". OpenTable diners voted Ernest's top 100 in Canada for two consecutive years. Seasoned chef instructors emphasize the importance of using high quality local regional products. Mastery of traditional cookery combined with contemporary artistry has resulted in a truly electric cuisine. Elegant service is provided by eager Culinary and Hospitality students. An emphasis on etiquette and authenticity is encouraged through the guidance of professional mentors.

This was absolutely amazing. I highly recommend that anybody that wants a fine dining experience to eat here. The food is prepared completely from scratch and cooked by student’s in the culinary arts program. Every single component is made from scratch. Our waiter was Jean Paul. He was excellent. Extremely attentive and was able to give meal advice for all of my allergies. Rayne was one of the cooks and I recommend anything he is cooking. I would give this more than 5 stars if I could.

I’ve dined at Ernest’s many times and usually have a wonderful experience, but this visit was a disappointment. We were seated in a far corner near the kitchen, where the clatter of cutlery being organized was audible through the wall and next to the wine station, where staff were constantly passing by. The service felt rushed and poorly timed—our bread basket, amuse-bouche, and appetizers all arrived at once, even before our drink orders had been fulfilled. Later, dessert was served without anyone asking if we’d like tea or coffee. Despite the service missteps, the food and presentation remained excellent.

The food was excellent. I had the mushroom cabbage rolls and creme brûlée for dessert. Both were very different and very, very good. The service was attentive and the young ladies serving us were very helpful in explaining the menu. Overall it was a wonderful dining experience.
