This is not like your standard restaurant visit, because it involves getting to meet and talk with Adam, his team, and the wine people; and the entire atmosphere is wonderfully warm and convivial. You also get talks about the dishes and wines on offer, and to see the team working in the kitchen, producing and carefully plating the dishes. Oh, and the food? Well, anyone who has ever visited Trinity will be unsurprised to hear that it is always superb. Adam uses many classic ingredients together with a few more unusual ones, and produces dishes just bursting with flavour. He has that knack of combining flavours so they absolutely sing in the mouth in perfect harmony, without ever being overpowering or losing their individual notes. This is a very welcome change as you are able to craft your own unique experience at the restaurant. The food coming from this very well-oiled kitchen is exquisite, technically proficient and incredibly interesting. The service is casually perfect, with all the hospitality and technical knowledge one would expect from a 2 star restaurant without the formality and stuffiness that often accompanies those accolades. The wine list is endlessly fascinating with bottles from regions that will surprise and delight even a novice oenophile.
