Found out the restaurant has been around for 12 years, pit loss for not knowing that! It was simply a trip to Paris for an experience of a great Parisian Cafe. The menu has you hesitant on many of the delicious dishes you can possibly order at this one sitting. The best is that each dish we had was as good as the menu read. The classic French Onion soup, the duck confit and must try the Meyer Lemon pie! This restaurant is an absolute go to for a delicious, sweet atmosphere and a perfectly attentive staff! Having known about Republique for many years and seeing it on many "best" lists I was prepared to be disappointed, but it met my expectations. My parents and I were very pleased with our meal, the service, and the ambience which is beautiful. While the octopus was decent, it was slightly overcooked and just okay. In our opinion, the Little Door Caviar was the standout starter—its flavor was far superior. For mains, the Branzino was perfection—crispy and flaky on the outside, tender and soft on the inside. The ribeye was equally fantastic, cooked beautifully and packed with flavor. We finished the meal with the crème brûlée, which was the perfect dessert—smooth, creamy, and with a perfectly caramelized top. The service was impeccable, making the evening truly special.
