   I hate to write this review because I’ve been waiting months to try Copley’s but…it was, besides the utterly charming ambiance, a total disappointment. The fire-lit courtyard was such a welcome delight, but it was downhill from there. I ordered a cocktail that listed gin and Aperol as key ingredients - but I could taste neither the floral notes of gin nor the bitter highlights of Aperol. Instead it just tasted like watered down Hawaiian Punch of my summer youth days. I sent it back with so many apologies and regrets after one sip. The empanada dough was tasty and crispy but the filling was cold and dry (I’m guessing it went right from the fridge to the fryer but not warmed long enough). The Caesar salad was the highlight with (finally!) a salty bacon crunch. Both of our mains had elements that were cloyingly sweet - almost saccharine like. Literally every cocktail or dish we ordered was overly and unnecessarily sweetened in some way. We just didn’t understand why. Again, the staff was lovely and the courtyard charming beyond words, but nothing could rescue the truly disappointing meal. When the check came, my first undrinkable cocktail was still on the bill. Mistakes happen, and it was rectified, but it speaks to the unevenness and disappointment of the whole experience. Sadly will not return on our next Palm Springs trip.

   This my favorite restaurant in Palm Springs. I always bring guests and they are equally impressed. Perfect!

   We had a group of 8 and everyone’s meal was excellent. Our server was very knowledgeable and attentive. Overall an excellent experience.

   If you can request Amine as your waiter Do It! He made our dining experience! Lovely atmosphere for outdoor dining. Food was delish. I really enjoyed Muscovy duck. Cooked to perfection. Cocktails did not disappoint. Our group of 9 left with great fondness for our time at Copley’s. Great memories were made.

   We have been dining at Copley’s for almost 20 years and the consistency of service and food is unmatched in Palm Springs. We love the vibe and our server Grace was exceptional.     We had some issues with the food we ordered and our server was more than accommodating. They did a wonderful job of making it right for us. We had the lobster Mac and cheese and it was phenomenal! The soup of the day was cream of mushroom with a truffle oil and it was to die for. Definitely check them out.
